These saffron lassi popsicles with walnuts are like tasting all the best things about summer on a stick.
This recipe is really easy to pull together, especially when it’s hot outside and you’re struggling to feel cool.
The best part? There’s no cooking involved! All it takes is a few simple ingredients and you’re set!
Saffron Lassi Popsicles
Ingredients
8 to 10 walnuts + few extra chopped for mixing in the popsicle mould
1 cup yoghurt
A few strands of saffron, soaked in warm milk
3 tbsp honey – or to taste
½ tsp cardamom powder
Method
- Add the walnuts to a blender and pulse them to a coarse powder.
- Add the yoghurt, saffron and milk, honey and cardamom powder and blend together.
- Pour half of the lassi mixture into your popsicle moulds.
- Add a few chopped pieces of walnut, and fill the popsicle moulds with the rest of the lassi mixture.
- Insert the popsicle sticks into the moulds, and freeze the saffron lassi popsicles overnight.
